Please let me know if anyone actually tries this recipe. I know it is kind of silly to say that, but it is my first recipe and I am eager to share!
I forgot to add cardamom and cloves as the other two spices I used. It was actually a chai spice mix! The idea for this recipe was from the song about "put the lime in the coconut" which kind of gives it the mayo type of taste that I, for one, used to love in waldorf salads!

I want to add that the amounts of the ingredients are not exact. I did add the spice also to the cream before mixing and later I added more celery and it just got yummier! MMMM yummier! :)

mayo? yikes! I agree jenny, that is bizarre. Even when I ate dairy products I've always had an aversion to mayonnaise. It would make me very ill. I personally believe it to be the most vile condiment ever invented. It's like sandwich glue.
But this recipe looks absolutely fabulous (and it's mayo-free!) Cool!

wow! sounds so much better than the original version (i could never fathom mayo with fruit--but coconut/almond/banana cream? yes!!)
