Probably SHOULD serve two
Ingredients
1 baseball size beet, roughly cut
2 branches of parsley (to taste)
3 large carrots
1 large Fuji Apple
half a lemon (skin too!)
quarter of a lime, optional
Recipe Directions
Run all ingredients through a juicer (or blender an strain). I like to juice straight into the cup so the surface has a foamy rainbow.

By humboldthoneyThis stuff is sweet and stains just like Kool-aid but is a million times more yummy and good for you. My birds LOVE it and so does my husband who hates beets. I’ve changed the recipe a little since I got my juicer, adding more citrus seems to cut the earthy beetness.

OMG... this juice is to die for!! I am going to be using it as a staple juice for all my blender concoctions, and with the daily vega.... thank you!!!!!!

OMGosh! I got my juicer today and it was the first thing I tried.
Almost TOO sweet (thank you Fuji!)I had to water it down. I'm sure kids would love it so long as they are not beet-phobic and even then they would have to be way more spooked of the beesties than my husband.(hard to imagine hee hee).
I hope I don't turn purple...

Marjorie: Where is Humboldt Park? I once lived in Redwood Park (ahh! youth)but now I've settled? for San Francisco though I sure do miss the Arcata co-op.

Ooo! Maybe cut down a bit on the beets... I'll admit I'm a super-big fan even as a kid. Lately I've been adding lime wedges too YUM!

Pretty, yes, but probably tastes nothing like Kool-Aid, right? Oh, well - I'll probably like it, even if my son doesn't go for it ;)

A juicer might work better for this. I'm still awaiting mine. I use a Waring professional blender (about $60) which is plenty strong enouhgh to zip through beets. (I can't imagine what a fancy-pants $400 blender would do that mine can't) A nut mylk bag might help but I like some pulp.
