I almost wanted to call these “steaks” when I first bit into them, but my good vegan consciousness wouldn’t allow me! So, here they are…drifters. And delicious!

2 eggplants (peeled)
Recipe Directions
1. Peel and slice thinly (but not too thin) the eggplants.
2. Top with “Ricotta” filling from my Lasagna Rollups, and then top that with the “Marinara” filling.
3. Place these drifters in a dehydrator for 5-7 hours. Yum!
