Curly green kale, washed
1 avocado, diced
2 tablespoon basil, minced
2 pinch cayenne, or to taste
3 tablespoon Lemon juice
4 tablespoon Olive oil, or enough to balance out lemon acid
10 sun-dried salt cured black olives, chopped
½ teaspoon chili powder, or to taste
½ cup grape tomatoes, halved
Here’s what you do when you get home from work. Take some kale leaves and massage some salt into them for like a minute. Then squeeze some lemon juice over them in a bowl and set aside. Pour lemon juice into a bowl or liquid measuring cup, add olive oil, olives, pinch of salt and spices. Mix up and let sit while you go change out of your clothes, sort the mail, whatever. The salt from the olives will leach a bit into the dressing. Come back 10 minutes later, rinse the kale and bowl and put kale back in bowl. Mix avocado into the dressing and coat well. Place tomatoes on top of kale and then smother with the avocado mixture. super yum!

I made this tonight using just a handful of kale leaves and it was so flavorful and satisfying. The slight bitterness of the kale gave it a really well-rounded flavor. By massaging salt into the leaves with your hands, it really helps soften up the kale.
