.33 head Red Cabbage, thin sliced
1 Red Bell Pepper, thin sliced
1 Yellow Bell Pepper, thin sliced
1 Orange Bell Pepper, thin sliced
1 Carrot, grated
½ sweet onion (I like Vidalia), thin sliced
1 cup Cliantro leaves, destemmed
1½ tablespoon ginger, peeled
¼ cup Apple Cider Vinegar
2 teaspoon Sesame oil
1 tablespoon honey (can sub. agave, I assume)
2 tablespoon Sesame Seeds
Combine cabbage, peppers, carrot, onion and cilantro and toss well.
Blend ginger, vinegar, oil and honey. Pour over salad and toss again.
Top with sasame seeds.
Feel free to play with different veggies. Just make sure there is lots of color!
