½ Beet, shredded
2 Radish, shredded
¼ Jicama, shredded
¼ Avocado, sliced
1 teaspoon Olive Oil
1 tablespoon Vinegar of choice
sprinkle Himalayan Sea Salt
2 Collard Leaves, deveined
The beet turns everything a beautiful red.
Wash & devein collard leaves. Place first 4 ingredients (the roots) in food processor with shredding disc. Add oil, salt & vinegar to processor bowl, mix well. Slice avocado and place in collard leaves, add red root mixture, roll up into wraps and enjoy!!
If there’s no food processor available, you can also use a grater, mandoline or slice by hand. A processor just cuts the prep time.

This is really tasty. However, I found it a bit drippy as a wrap. So I chopped and massaged collard greens with a little lemon and olive oil and then put the rest of the ingredients on top. Very fresh and delicious! Thank you!
