A Community Recipe by Rakao
I was in the middle of making carrot cake when I was overcome with the desire to create a pineapple cake instead. So this is essentially carrot cake icing with a bunch of stuff added. It was so easy, and it turned out wonderful! A great tropical breakfast or dessert! Very sweet!

Yeah, you scoop it into a bowl & eat with a spoon. Hmmm, I wonder how it would turn out dehydrated...

Just made this. I freezed it coz the filling was rather wet. (is it suppose to be wet?). So it turned out like ice-cream, with a pineapple sorbet topping. Great stuff still!

hi Rakao...i just made this and it turned out yummy! i only had 1 apple, and i didn't have those cute kiwiberries. i did chill it and it was like a soft cheesecake....thanks!

that sounds and looks delicious and simple. is it something you have to eat in a bowl, or does can you cut into it like cake?
