2 apples (peeled, cored)
1 cup cashews (soaked)
½ cup flax seed (ground)
½ cup orange juice
½ lemon (fruit and juice)
1 tablespoon coconut oil
Sprinkle of salt
Sprinkle of orange rind
2 cups pineapple (diced)
Kiwiberries (for garnish)
1. Put first nine ingredients in the food processor and blend.
2. Pour into dish and set aside.
3. Then put pineapple in food processor and blend.
4. Pour onto cake.
5. Slice kiwiberries (the most adorable fruit!) and arrange on top. Yum!
I was in the middle of making carrot cake when I was overcome with the desire to create a pineapple cake instead.
So this is essentially carrot cake icing with a bunch of stuff added.
It was so easy, and it turned out wonderful! A great tropical breakfast or dessert! Very sweet!
