½ cup caramelized pecans
2 cups sweet potatoes (peeled, chopped)
¼ cup water
¼ cup dates
½ teaspoon cinnamon
½ teaspoon vanilla extract
1. Soak dates in 1/4 cup water. Save soak water.
2. Place 1/4 cup of the pecan and all of the sweet potatoes, soak water, dates, cinnamon, and vanilla in a food processor and puree.
3. Pour the mixture into a casserole dish.
4. Mix in remaining pecans and enjoy!
