4 cups spinach
2 large tomatoes
1 clove garlic
2 green onions
2 ears of corn
1 large avocado
1 large tomato
Salt and pepper
1. Clean and chop spinach, cucumbers, 2 of the tomatoes, garlic & green onion. Add to blender.
2. Blend until smooth. Pour into a bowl.
3. Top soup with corn kernels cut from the cob, diced avocado, and diced tomato.
4. Add a squeeze of lime, a sprinkle of flax seeds, and a sprinkle of salt and pepper.
