4 cup spinach
2 large tomatoes
1 clove garlic
2 green onions
2 ears of corn
1 large avocado
1 large tomato
salt & pepper
Clean & chop spinach, cucumbers, 2 of the tomatoes, garlic & green onion. Add to blender. Blend until smooth. Pour into a bowl.
Top soup with: corn kernels cut from the cob, diced avocado & diced tomato.
Add a squeeze of lime, a sprinkle of flax seeds & a sprinkle of salt & pepper.
