2 Cucumbers, seeded and sliced
½ red pepper, julienne
½ red onion, thin sliced
2 scallions, bias cut
1 carrot, julienne
3 tablespoon rice wine vinegar
2 tablespoon limejuice
2 tablespoon olive oil
2 tablespoon sesame oil
1½ tablespoon Agave
Salt to taste
Combine all the dressing ingredients (Rice wine vinegar â€“ salt) and pour over the sliced cucumbers, onion, red pepper, scallion and carrot. Mix and let sit for 1/2 an hour, top with sesame seeds and eat!

I love Thai food and especially the cucumber salad I used to get with my meal. This is a replica of that salad. The rice wine vinegar gives it a great tart flavor. Adjust the seasonings to taste.
