  • 1. Place walnuts in food processor. Process into a fine meal.
  • 2. Add dates to the walnuts in food processor. Process again until well combined. (You should only see tiny bits of dates.)
  • 3. Add all remaining ingredients into food processor. Pulse briefly until recipe is well combined - do not over-process. You're looking for somewhat chunky texture, similar to the photo.
  • 4. Press firmly down into pie dish using your hands.
  • 5. Freeze for at least 5 hours (or ideally overnight). Store in freezer at all times.

This is a crustless pie recipe, so there's only one step needed. In fact, I've used crust ingredients, so you get the crust flavor without the added step of having to separate them and make two mixtures.

This recipe should always be stored in the freezer. It should be eaten straight out of the freezer, or thawed for a maximum of 15 minutes. Also, it keeps well in the freezer so it can be made in advance.

If you don't have fresh cranberries, you can use dried cranberries or raisins instead.

Hey Ellen! Glad you like. It could be because I didn't process the dates very much, so there are darker flecks rather than an overall dark color. Also, maybe I went light on the cranberries. What do you think?

Yours looks really pretty and light pink in colour, mine came out much darker, taste is great though.

Hey hey from Czech republic :-) Thank you a lot for yourwebsite! And for this recipe also! Amazing (waiting for us in frigerator :-)) But I have one note: I do everything as you said! And the cake is dark. I use good ingredients and I did not mix it too long. I have the same problem as Helena had. Next ti I would like to have nice pink colour. Please, can you give some other advice? Thank you a lot and for taste I mark 5*:-)

Hi Silvie! This is strange! I didn't cheat on the recipe, I truly made it exactly as written so I am not sure what to say! I did take the photo immediately after making - maybe it darkens over time?

I gave this recipe a five star review without even making it and here's why: WOW, it looks beautiful and from what I can tell from reading through all the ingredients and instructions, it would SO work and be SO delicious. Only thing that worried me is that the apple factor might make it brown, but that doesn't appear to be a problem so this is TOTALLY on my to-do list. What a super duper festive treat. Right on. Thanks to Twitter, I just discovered your site and if this recipe is any indication of what's to come... I can't wait to explore further :-)

Bill - I haven't gone through this entire site - but I find that substituting stevia for the dates works very well in many recipes.

Nomage factor. A kind of nougat-y goodness. Love the freshness of apple & cranberry with the gentle coconut crunch. Good work on the single date sweetner. :)
