This walnut-based raw taco filling is an excellent, hearty vegan topping for tacos or a taco salad. It keeps in the fridge extremely well for up to 4 days. A food processor is required.

This recipe is an excellent, hearty base. It’s a perfect addition to a whole foods vegan meal because it adds a heartiness and depth that’s hard to get without faux meat soy products.

This recipe calls for sun-dried tomatoes that have been soaked in oil. Usually, you will purchase them pre-soaked.

If you don’t have walnuts, pecans will work equally well in this recipe.

As you can tell by the ingredients, the size of this recipe is quite small. Double up as necessary.

This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even. I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe. It's a perfect addition to a raw meal because it adds a heartiness and depth that's hard to get on a raw food diet. I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products. One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

This recipe was amazing and I have been thinking of it frequently the last few days. I made it a couple weeks ago & didn't have any toppings for it but just enjoyed it plain & with lettuce & crackers... sooo delicious! It's easy to take along and seems like it would pair nicely with a few other things. I just want to make it again & eat it with a bunch of tomatoes, corn & lettuce & my own sweet habanero sauce! Yum!

I had salad with mine. It was so good I shared the recipe with my sister in law. Next time I will be eating it with the Savory Crackers, which are also very, very, very good. I'm looking for a Parmesan Cheese recipe to use with some of your wonderful recipes. Your recipes are simple, quick, and so good to the taste. You are so smart. How do you do it. I've been raw only 4 months and sometimes I want to eat some cooked food, then, I try one of your recipes and the thought goes right out of my mind. Thank you so much for keeping my healthy. For an easy Parmesan cheese recipe : [this is what I make each time, but sadly, I never measure my ingredients, I just eye ball it (this is what's I find so cool with raw recipes, it's really intuitive and fast without having to be to precise)]

I ground some raw, unsoaked almonds in my food processor until a coarse meal, then I add some nutritional yeast and pulse it a little more to combine.
The ratios would be something like 1/2 cup of almonds for maybe 1 tbsp of nutritional yeast. Salt and pepper to taste!
It keeps for ever, but just to be sure I store mine in he fridge.

Re: Parmesan cheese, I'm not sure if you have a dehydrator, but my version of parmesan cheese is shared in The Rawtarian's Kitchen - but basically, you can make the raw cheese sauce recipe (https://www.therawtarian.com/raw-cheese-sauce) then spread it onto parchment paper thinly and dehydrate for about 7 hours, and then crumble it and it's really tasty, parmesan-cheese style :)

Great stuff!! Do you soak the walnuts first on use them dry. I have been meatless for about 30 days right after my 38th birthday & loving it. I'm not a great cook, but I want to learn more about how to make simple raw meals. Thanks!!!
