Ingredients
- 1 cup walnuts
- 1/3 cup sundried tomatoes, soaked in oil
- 1 1/2 tablespoons olive oil
- 1/2 tablespoon chilli powder
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon sea salt
Recipe Directions
- 1. Place all ingredients in food processor.
- 2. Process until a texture similar to the photograph is reached. (1-2 minutes)
- 3. Enjoy immediately or store in fridge for up to 4 days.

This walnut-based raw taco filling is an excellent, hearty vegan topping for tacos or a taco salad. It keeps in the fridge extremely well for up to 4 days. A food processor is required.
This recipe is an excellent, hearty base. It’s a perfect addition to a whole foods vegan meal because it adds a heartiness and depth that’s hard to get without faux meat soy products.
This recipe calls for sun-dried tomatoes that have been soaked in oil. Usually, you will purchase them pre-soaked.
If you don’t have walnuts, pecans will work equally well in this recipe.
As you can tell by the ingredients, the size of this recipe is quite small. Double up as necessary.
This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even. I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe. It's a perfect addition to a raw meal because it adds a heartiness and depth that's hard to get on a raw food diet. I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products. One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

Your picture and texture looks crumbly like taco meat. Mine is all clumped together. Any suggestions on how to get it crumbly?

Aah yes, this is simple! Next time, do not process it for as long.
(More crumbly = shorter processing time.) (More moist and sticky = processed too long)

My Husband keeps asking me.. "So there is NO meat in this?"
I'm not sure what moved me to start eating raw but I knew there had to be someone that had great tasting recipes!
Alas, I found myself at your site and I made over 10 of your recipes over the course of a week or so and they were so good. Also important (kind of):) Is my husband has also enjoyed them tremendously! Oh, and that sweet potato noodles with mushrooms recipe?!! Amazing. Thank you.

I would love to make this recipe, but my husband can't have tomatoes, or peppers and no night shade vegetables, what can I substitute for the tomatoes in your recipes. I'm dying to try all your recipes with tomatoes but I'm stuck on what I can use instead of tomatoes. Can anyone suggest a substitute.

Hi Sandy!
First, I don't recommend making a lot of substitutions to recipes. Instead, I recommend looking for recipes that do not contain the problem ingredients in the first place. (This is basically because once you start doing a lot of subs, the recipe is never as good!)
Also, my advanced search function will help you a lot - https://www.therawtarian.com/search then click on the little knife and fork icon, and you can search recipe ingredients "made without" tomatoes etc.
Now that I've gotten those two thoughts out of the way:
1. It really does depend on the recipe. Pretty much any cracker or dehydrated recipe that contains fresh tomatoes can easily be substituted with a similar quantity of some sweet, wet veggie - like maybe shredded carrots. Similarly with red peppers, generally. As long as the recipe isn't heavily weighted with those ingredients, because then the likelihood of a food mishap is higher :) but if it's a minor part of the recipe, then usually you're fine.
2. Now, substituting sun-dried tomatoes will be much more challenging since they are so unique in terms of both flavor and texture. Now, the first thought the comes to mind, although I've never done this myself, would be to try olives (canned and drained or from a jar) plus some olive oil instead of sun-dried tomatoes soaked in oil. Of course, the flavor will be different, but the texture would be similar so might work well in a recipe like this taco meat. Also, they are not technically raw, but it's an interesting idea.
Wow, this is a huge comment, but apparently I had lots to say on the matter!

I make this a LOT and I can truly say I have never had a better "taco" meat substitution before this one, if I lose this recipe I will lose my mind. I'm drooling just thinking about all the things I make using this "meat". I am not vegan or vegetarian, sometimes semi raw but this recipe is a game changer. TRY IT! I'm actually soaking sun dried tomatoes as I write. I def double this recipe because I can't get enough, lol. I am a wrap addict topped with jalepenos, red onion and raw peppers. I usually spread hummus first then taco meat then toppings but it's great as a salad topper too! I'm type O negative blood type so I have mad cravings for meat and this taco meat helps big time! I would love to be 100% vegetarian or vegan but not sure if I can 100% commit so I try to do vegetables and meat dishes but I've been adding less and less meat and more vegetables, mushrooms also help to get that "meatiness" I crave. Again this recipe is pure genius and hits the spot when I crave spicy meatiness! <3

Raw taco meat recipe
I made this just a bit ago. I followed the recipe exactly and I thought it was terrific!! I wrapped it in a green cabbage leaf with tomato, bell pepper, garlic, onion, spinach, homemade salsa, and nutritional yeast flakes. It was seriously delicious!!! Thank you so much for sharing your recipes, I love them.

if using adzuki beans, do you put them in the blender mixture? i'm not sure what you mean by sprouted...Also the person that used the mushrooms, just add them to the blender mixture also???

For example, make a lettuce wrap and stuff with taco meat, sprouted adzuki beans (essentially bean sprouts!), sliced tomatoes etc!
