2-4 servings, depending on how hungry you are!
Ingredients
2-3 large broccoli stalks, 1 large broccoli head
2 stalks celery
1/4 small onion
4-5 large tomatoes
2 garlic cloves
2/3 cup brazil nuts
2/3 cup hemp seeds
2/3 cup nutritional yeast
Salt - to taste
Cayenne pepper - to taste
Any other herbs or spices - to taste
4-6 cups hot water
Recipe Directions
Coarsely chop the broccoli stalks, celery, onion and tomatoes. Separate the broccoli head into flowerets and set aside along with one chopped tomato.
Add all ingredients except reserved broccoli head and tomato into a high powered blender. Blend until smooth and creamy. I used a Vitamix and let it continue to run to warm up the soup. Stop blender and add broccoli flowerets and tomato chunks, then pulse a few times to blend, but leave chunky.
Pour into a warmed bowl and enjoy your raw (except the nutritional yeast) broccoli soup! Mmm, Mmm good!
