Poemomm's Thoughts
By poemommThis dish was inspired by the old salad I used to eat, containing Top Ramen, almonds, and green onions (DO you know the one I’m talking about?). There’s nothing like guilt free food that tastes “right”—and this tastes right as rain… or ramen!
The almonds are a touchy subject, I know. This recipe is for those of us still willing to use them.

I buy almonds at sam's club. I put them in water over night and in the morning they've sprouted. Sounds like raw to me.

Almonds can be labeled raw even if they are steam pasteurized. At my Whole Foods they are labeled raw but also post a disclaimer that they are steamed. All almonds must be steamed at this time, it's really unfortunate. But you can purchase truly raw almonds from California if you purchase direct from the farmer, almondsalive.com is offering truly raw shelled almonds delivered for $10 a pound.

My grocer still has the "raw" label on them too, so I'm going to continue buying them until they no longer label them as raw!

You can get truly raw almonds as long as they are not purchased from California. There are some companies that now import organic almonds from Europe. You can check with your local co-op or health food store to see if they carry them. They taste a little different, but they are still almonds and they are raw. Hope you can find some.

You got it! It's technically not raw any more. To be perfectly blunt, there aren't nearly any truly raw, viable, and living nuts commercially available, except the truly raw cashews I've heard about (cashews make me very sick). So nuts may be part of a High Raw lifestyle, but I wouldn't think truly 100%ers would eat them.

I think it's cuz they're pasteurized now - meaning they're no longer raw or viable and living. Such a shame! That's for the state of California, but since they're the main almond growing state for the US...
