2 to 3 large sliced beets (soaked overnight)
8 to 10 mint leaves
Juice of half a lemon
1 dessertspoon of honey or agave nectar, or 2 dates
2 tablespoons coconut meat
2 tablespoons coconut juice
1 cup water
1. Blend all ingredients until very smooth. Add more water if necessary.
2. Freeze. Blend again before serving.

This recipe requires freezing, which I think isn't considered raw by everyone, but here it is anyway.
It's sweet and very fresh tasting (I love mint).
