Ingredients
8 to 16 ounces organic carrots (shredded)
1 medium to large zucchini
Handful of raisins (add more if you like)
1 tablespoon agave nectar
1 teaspoon turmeric
1/2 tablespoon nutmeg (or to taste)
Recipe Directions
1. Chop the zucchinis into small bite size pieces.
2. Add the shredded carrots. Mix well with the raisins.
3. Add the agave and turmeric one at a time so that they coat the carrot mixture. Then add the nutmeg.
4. Mix well and enjoy either at the prepared temperature or chilled.
GREEN GIANT 80's Thoughts

I am new to raw food after being a vegetarian for a little over a year. I decided to make the switch not only because it's healthier but because the food is so attractive and delicious.
This is a recipe that I came up with (I hope lol)--if that's what you want to even call it or you can call it an experiment or a concoction. Nevertheless, I think it is really great and can be modified to one's own personal taste.
You can classify this as a dessert or a salad, I believe. Personally, I would eat it as a dessert any day.
So here it is. Please try it and tell me what you think and please play around with it and offer up any modification you may make to it so we can all stay raw and enjoy the finest things nature has to offer.

I really want to make this! I do not do an all raw diet, but am really interested right now in learning more about it. I am very in to healthy eating, this sounds great. I would love to know of any other recipes that you enjoy Green Giant, so that I can get started in this. Thanks.

Well Rachelle I am actually fairly new to RAW as well but having a passion for preparing meals I just create my own recipes as I go along. I will be more than happy to share them with you as I find or create them, I'm on the verge of perfecting a Strawberry salad dressing now and so far it is awesome and it's RAW. I have to get the measurements down but I wil post it soon. As I find most of the RAW salad dressing recipes are primarily vinagarette's but mine is a thicker consistency closer to a ranch and so very delicious on any salad. I will be sure to post it once it is perfected.
