This is an easy and very delicious soup. I really did enjoy it a lot. What’s more fun is that I completely made it up and it turned out so good.

Ingredients
3 cups dense almond milk (3 cups water to 1 cup almonds)
1 cup shiitake mushrooms (dried)
½ teaspoon 7 spice Japanese spice
1 teaspoon miso
1 tablespoon soy sauce
2 tablespoons nutritional yeast
2 tablespoons yellow onion
1 tablespoon olive oil
Sprinkle of salt and pepper
Recipe Directions
1. Mix all in blender. Enjoy!

Thanks, mpop. This soup is AMAZING!! It's so creamy and comforty. I found fresh shiitake mushrooms, so I used them. I didn't find japanese 7 spice, but I have a japanese cookbook that listed the ingredients. I made it for myself and put it in. YUMMY, YUMMY, YUMMY!!!

I'll bet I could get my Russian husband behind this receipe if I substituted dried porchini mushrooms for the shitake mushrooms, and exchanged the 7-spice with 1 tablespoon chopped dill, and more for garnishing the bowl. A good grinding of fresh black pepper and a sprinkle of sea salt/chopped dill on the top would make this divine. Thanks for sharing!

Pretty yummy! I missed cream of mushroom soup....today I'm going to try it with other, less strongly-flavoured dehydrated mushrooms. Shitake mushrooms are good, but have a very distinct, strong flavour. The best raw soup I've tried so far.

susannabellajane, I've made this recipe with a different kind of dried mushrooms and it came out just as good. I also did not put the 7-spice and added regular italian spices and it came out pretty good anyways. You can also add some garlic to it too.
