12-14 balls
Ingredients
2 cups raw cashews (unsoaked)
4 tablespoons agave or raw honey (depending on how sweet you like it)
1 teaspoon vanilla extract or scraping 1/2 bean
2 tablespoons spirulina powder (I use Nutrex flakes)
Pinch of sea salt
Pinch of cinnamon
Shredded coconut (for rolling)
Recipe Directions
1. Pulse unsoaked cashews in a food processor until ground, but still chunky.
2. Add liquid sweetener, vanilla, spirulina, sea salt, and cinnamon. Blend until smooth, but not creamy.
3. Roll into balls, and then into coconut (optional).

These are the perfect pick-me-up. Spirulina, cinnamon, vanilla.
Mmm, they are so easy and quick to make.
Perfect after-dinner treat I always love having on hand.

Earthintruder, these look really good to me. When I get off my juice fast I think I will make them. Instead of cashews, I think I will try sunflower seeds and for the sweetener I will try stevia. If I don't use the coconut, it will not only be lower in fat, but, there will not be a nut and fruit combination, which I try to avoid. I really like the idea of spiralina in the mixture. Thanks!

these were awesome! everyone at work loved them!! though we all had to laugh at each others green mouths!! i made it for st patty's day.. even mixed some of the spiralina in the coconut before i rolled it so it would have a green color.. i actually didnt have enough cashews so i did half cashews and half macadamia.. it worked out great!!
