Ingredients
Half a head of cauliflower
4 medium carrots
1 beet
3 green onions (the white parts)
himalayan sea salt, to taste
teaspoon turmeric
teaspoon chili powder
teaspoon ground mustard seeds
teaspoon ground cumin
tablespoon curry powder
1/2 teaspoon asfoedita (get at an Indian grocery store)
about a 1/3rd bunch of cilantro
3 tablespoons of olive oil
Recipe Directions
Pulse the cauliflower, beet and carrots in a food processor until rice-like. Mix vegetables in a bowl with the rest of the ingredients. Enjoy!
Vegan Goddess's Thoughts

I'm on a curry kick! This recipe is delicious by itself or in a collard green wrap with my Cauliflower Curry Patties, young coconut meat and tomatoes. But be free, serve it however you wish! I promise you that this recipe is flavorful and you won't be disappointed.

Cauliflower Carrot Beet curry
Now I know why I like Indian food, it's not just curry alone, but their combinations of other spices mixed in with specific veggies. Once again, great recipe Vegan Goddess!

This is a great recipe. Thank you for posting it. I didn't have asfoedita, and I added in some chopped red pepper and sunflower kernels. Still good ? ... as a matter of fact, i can't stop eating it, and that's one big bowl in my picture.
