Recipe Directions

1. Scoop coconut meat and mamey into a blender or food processor (or a bowl for the electricity-free route). Blend.

2. If wanted, add coconut butter and psyllium husk powder.

3. Chill for a bit.

A delicious and rich custardy pudding!

Psyllium husk powder is used to help things hold together. I am not sure if it is actually raw but I have seen it used quite a bit in pies.

It is inexpensive and available in the grocery store with fiber supplements.

A mamey is a tropical fruit that is brown on the outside like jicama and bright orange on the inside. It tastes kind of like pumpkin pie. It is grown here where I live (in South Florida) and I assume in other subtropical areas as well.

Yes, it is called a Mamey Sapote.

Unfortunately I am under the impression that it is a pretty region specific fruit...but I rejoice in the diversity of this climate zone! (I just went to a presentation this morning on seed patenting....yikes!)

Forrestlyone, did you ever go to the fruit stand Robert is Here (or any of the less expensive ones on that stretch of road in homestead)? I am moving back to TX in a couple of weeks and I am so disappointed that I won't get to go to the Fruit and Spice park in Homestead. They grow all kinds of exotic fruit and spice trees and you're encouraged to snack your way through the park!

Any fruit mixes well with coconut in my opinion, right?

The mamey just gives it a custardy texture and flavor.
