Ingredients

2 cups truly raw cashews (soaked)
1 cup young Thai coconut meat (the thick kind)
1 recipe Raw Oreos
5 tablespoons maple syrup or raw agave

Recipe Directions

1. Blend cashews, coconut, and sweetener in the Vitamix till creamy smooth. Add a little water if needed to make a smooth cream.

2. Freeze for 20 minutes.

3. Process in ice cream maker. Freeze again for 20 minutes.

4. Crumble Oreos into ice cream.
