Alpdesigns's Thoughts
By alpdesignsThis is a great holiday drink.
I’ve made this smoothie with and without ice blended in. It’s great both ways.
I think that this would be festive when served in a martini glass, garnished with a skewer of cranberries and/or a sprig of mint.
It has a beautiful pink color and a fantastic taste.

what is the benefit of the lemon peel and does it leave a funny taste?

I put a whole lemon in a cranberry smoothie and was able to lift my knees off of the seat of my wheelchair and wiggle my feet. This is an off and on event for me, having neurological symptoms. I didn't know if the peel, containing flavonoids (hesperidin), was responsible or if the antioxidants in the cranberries were, but since then, this reaction happens everytime I eat lemon with the peel. It was serendipity. It's also easier than juicing the lemon, which is why I tried it in the first place. There is some bitterness but not enough to alter the taste in a negative way. The banana adds some body.

I make something similar to this with lemon juice and no banana. Yum!

Cranberry Lemonade Smoothie
I have to admit I was hesitant with mixing a banana in with lemon...let alone the whole lemon! But this tasted FABULOUS!!! Just like a thicker verson of regular cranberry lemonade! I LOVED it and surprisingly even my kids liked it (given it was nice and tart).
