Yield
makes 2-3 cups
Ingredients
1 yellow squash, chopped
1 poblano pepper, or 2 depending on the heat you like, seeded and chopped
2 tablespoon pine nuts
small squeeze lime juice
salt to taste
Recipe Directions
Blend all ingredients in blender or processor, I used my bullet blender last time, until creamy smooth. You may need to add some water to get everything going.
I serve it on enchiladas made with spinach tortillas filled with grated seasoned carrots, yum!

This is similar to another recipe I posted once. But, I was looking for a good, lower fat enchilada sauce using ingredients that I had on hand. This turned out really good and was very easy to make.
