it tastes like home made eggnog to me. Better. My folks used to make one with raw eggs because we never cared much for the commercial kind. I suggest you try it and see, it really is delicious tho. The spinach makes it so creamy and comforting, plus a little sweetness and nutmeg is all you really need to make it taste decadent, no eggs required. I really don't like eggs.

This doesn't really taste like eggnog to me, but it's not bad. I had to add a little Agave b/c the carrots didn't sweeten it enough. Oh, and i used a little coconut oil instead of the other 2 that you had.

It looks like a strange combo to create eggnog, but. . .just made it and it was delish! Thanks. . .I love eggnog and was just lamenting to my husband the other day that it is something I miss this time of the year. Not anymore!
