Recipe Directions

1. Blend garlic, onion, cayenne, and olive oil in a food processor. Of course, add more or less of whichever ingredient you like. If I had some tomatoes, I probably would have diced some up and thrown them in.

2. Combine oil mixture and sweet potato and place in dehydrator. Depending on the size of your sweet potato, you might have to add more olive oil.

3. Dehydrate the potatoes. I dehydrated for almost two hours. Dehydrate them longer if you want them to look more brown like fried hashbrowns.

Garlicky goodness. Tastes like Waffle House hash browns smothered, covered, and diced!

I had to hurry and take a picture before my boyfriend ate them all!

They were so good we kept sneaking bites so each other wouldn't see! Seriously, the taste of these are still making my mouth water!

Did you soak the sweet potato in water beforehand to take away some of the starchiness?

Wow, not sure if I did this right. I used 3 sweet potatoes. The cayenne was too much for me, almost blew my head off! I just poured the mixture on a baking tray (I use my oven instead of dehydrator) and ate the mixture after about three hours. I too added tomatoes and it tasted wonderful! Just a little less cayenne for me next time :)

I used a garnet yam. They are the orange flesh ones. I've never tried it with a Japaneses sweet potato before. They are a little more firm if you were to cook them.

Wow! I'm so excited to try these! By sweet potatoes, do you mean the orange-flesh ones or the white-flesh ones? The pic looks like the orange ones, so if no answer I guess I'll use the orange ones?

Steamboatkatie: It's my dad that smelled that way, and me too now. Even his italian mother complained. He juices it every day. People may claim to run, but they're sure glad to stand next to us on muggy buggy evenings. LOL I can't wait to make this recipe. Hashbrowns are a weakness. They call me.

I think this will get me through any cravings, thank you SO much for this idea. I LOVE you for this. My GarshBrowns (haha) are dehydrating right now... I didn't have any onions but I will surely make some with the onions tomorrow. Did I tell you that I love you? I LOVE YOU!

Holy Crap these are so good! They have become a staple snack in my house (and oops, sometimes a meal when i just can't stop...). I did 2 sweet potatoes, 5 cloves garlic (I LOVE garlic!), 2 tomatoes and 1/2 C oil and then fresh black pepper and a dash of sea salt once out of the dehydrator. A simply divine spud! Puts Denny's MSG GMO hashbrowns to shame! Thanks!

I made this today but without the garlic (didn't have any) a little diced onion and some tomato. I dehydrated all day until it was nice and crispy. Very good!

Mine were good but I'd really cut back on the onion and garlic. I used a small yellow onion and even after 3 hrs in the dehydrator, the onions were still a tad bit bitter and strong, not sweet and yummy like cooked onions. But it was still good.

But wait...

I just put Marriage Proposal Sauce (in Recipes, thanks to Crisyn!!!) on top and now am convinced that this will satisfy every craving (sweet, salty, spicy, hot, etc!!)

BTW, I used less oil

Nest time I might rinse them just to make them a bit less starchy. It might have just been my potato though. I left them in for 3 hours.

The would also be good formed around a bowl to make a nest, like those made to fill with veggies (which can also be done in the dehydrator) like in Chinese recipes.

That sounds yummy too joyceH! I love garlic and onions so I tend to put a lot in all my recipes. (sometimes I find myself smelling like my grandmother..lol) It's all good though it brings back good memories.. Kimbaly no I didn't soak the sweet potato first. I just chopped then added everything. If you soak them let me know how they turn out.... ORDER UP...

I have some in the dehydrator right now and we're looking forward to them as a sunday brunch. I only added one large clove of garlic as 4 seemed a bit much. We'll see how they came out. I made these modifications: 5 small sweet potatoes, one small yellow onion, 1 large clove of garlic, 3/4 cup of olive oil and a bit of sea salt.

Was wondering what I would have for lunch and now there is a batch of garshbrowns in the dehydrator. I took your suggestion and added tomatoes. Mmmmmm, can't wait till they are done! Thanks for the great recipe.
