It depends how hungry you are (but it can serve 2 to 3 people) -

Ingredients
½ cup fresh corn on the cob, shaved
½ cup red belled pepper, chopped
½ cup onion or scallions, chopped
1 avocado, chopped
1 lime, squeezed
sprinkle olive oil
dash cayenne pepper, to taste
dash black pepper, to taste
dash sea salt, to taste
some cilantro, optional
Recipe Directions
Mix all the ingredients together and you have a quick, but great tasting salad. The measurements are not exact. They never are in most of my recipes. Just trust your gut and what you like. I like my salad to be really spicy and sometimes I even add some tomatoes and cilantro. You can use this as a salsa as well, and eat it with spicy corn chips. I like to eat it with raw Spanish rice or with some nice spicy couscous that I make. I’ll make sure I post the recipe later. :)

This was really good! I tripled the recipe for a dinner party salad and it all got eaten up. I also added some cumin. :D
