Here's a refreshing , delicious breakfast scrambler! Any veggies you have on hand and/or like would be good in this. Zucchini would be great!

I've made this recipe a couple times too from *****Matthew Kenney's book, Everyday Raw.*******
This posted recipe above has a few modifications from Matthew's original recipe. I like the idea of adding the veggies at the bottom:
tomato, diced
orange pepper, diced
red onion, minced
fresh parsley, minced
Matthew's recipe is brilliant and there are endless possibilities with it. I'd like to try a pesto tofu scrambler using concept.
***I just wanted to give credit to the creator of the original recipe and concept as this is a brand new way of making raw tofu which originated at Matthew's restaurant, The Plant in Brooklyn NY****
