Ingredients
1 cup raw cashews
1/3 large orange or red bell pepper
1 lemon (juiced)
1 teaspoon onion powder
½ teaspoon sea salt
Water
Recipe Directions
1. Put all ingredients in blender with water just to cover the cashews, and blend together. I just take the cashews out of the bag and throw them in the blender with the rest of the ingredients. You can vary the thickness by using more or less water.

bq. If I want to make a large batch, how long would it last in the fridge? Thanks!
My rule of thumb is 5 days for raw foods that haven't been dehydrated. But, I'm not confident this is totally correct.

Outrageously good! I just made this tonight w/ a little fresh onion instead of powder (don't keep it on hand as I always have onions) and served it on my zucchini pasta. I just returned from the store right before supper w/ a beautiful orange bell pepper, too. To me, it tasted like the pimento cheese spread that I used to love when I was a little girl -- only even better. Thanks so much for this recipe.

I've been vegan for 2 years and this is by far the tastiest cheese substitute that I've tried. It was also the first recipe that I've made from gone raw--now I can't wait to try more. Thanks!

I just made zuchini noodles and cheese with this cheese sauce tonight. It was RAWSOME! I had a hard time not OVEReating. :) Thank you for the simplicity in the recipe.

I made this with 1 Tbsp. chopped onion instead of the onion powder - yummy! It made a great spread on my Sun Dried Tomato Bread.

I made this using a bit more water--delicious as a creamy dip for raw crackers! Very sweet.

i actually substituted a combo of pine nuts, young coconut meat, and macadamia nuts for the cashews. it turned out beautifully!

Cashews usually need to be heated for the shells to be removed. I have a source where I live of a company who hand peels each cashew which makes them truly raw. But you know, whatever, eating not completely raw cashews it's not a terrible thing to do.

faerychild, I hadn't heard about raw cashews not actually being raw. I did find a bit of a discussion in "the forums":http://www.therawtarian.com/forums/3/topics/600. One person noted being able to sprout raw almonds from New Seasons, so perhaps seek out that source.

I read recently that most cashews- even those stated to be raw- are actually not raw. I cant vouce for how true this is but heres the paragraph from the raw food website I found it: Most cashews that are sold as raw are heated to shell and boiled to remove strong toxins. Even those that sprout and grow, make some raw fooders sick. (Substitute Pine Nuts, Hazelnuts or Almonds.)
Thought that might be helpful. Im sure it would be great with a variety of other seeds or nuts:-)
