  • 1. Add cashews and sun-dried tomatoes to your food processor. Pulse to incorporate.
  • 2. Now add carrot and chili powder (and optional basil) to the food processor mixture. Process again until smooth, resembling a nut pate. 
  • 3. To make your noodles, peel your zucchini (remove outer green peel).
  • 4. Use a clean vegetable peeler (or a spirooli spiralizer if you have one) to slice zucchini into “noodles.”
  • 5. Place the noodles and the sauce into a large bowl and gently stir using two spoons until well combined. Eat immediately.

These raw Asian-inspired noodles are my live version of one of those instant noodle packs that are popular as instant side-dishes that pack zero nutrition. Plus, I'd argue that my recipe is even quicker to prepare (since you don't have to boil and wait), as long as you have a spiralizer to make your zucchini noodles, that is. (Best investment ever! Besides a Vitamix blender, of course!)

The Asian sauce is a thicker sauce than you might be used to, it's more of a nut pate. But don't worry about it. Just be gentle and thorough when mixing it with your noodles, and the final result will be similar to the photos.

The Asian sauce/pate keeps extremely well in the fridge for up to 3 days. However, zucchini noodles should not be made in advance. So if making in advance, store the sauce in the fridge, and then make your zucchini noodles at the last minute and then assemble. Once assembled, the recipe does not keep well (it'll get soggy).

This is insanely delicious! i made it with kelp noodles. Quick question: aren't sundried tomatoes presoaked considered not raw but still vegan? i love sundried tomatoes so I'm not sure it is going to make too much of a difference to me, as I am also unable to find bulk raw sundried tomatoes. Incredible recipe! Thank you so much. :)

Hi Elizabeth! You are correct re: the sundried tomatoes that you purchase in a store, but you can do them yourself to ensure 100% raw.

I'm going to try making this tomorrow night, but I think that curry powder will give it a more Asian flavor, so I'm going to try that. And I might garnish with julienned red pepper.

I made these with curry powder and cilantro, which I liked, but to take them to another level I really needed lime. Since I didn't have lime, I'm going to try them again, but will probably leave out the curry powder and turn them into peanut noodles instead. Since I'm not raw - just trying to eat way less pasta and more raw food - I can use organic peanut butter. Then I'll add cilantro and lime and probably LOVE these like crazy.

This recipe was my first unveiling of the Spirooli that I got as a Christmas present. It works beautifully! My two kids loved make the "noodles."

Wow...it really does take 3 minutes to make! My wife and i started eating vegan about 3 weeks ago (shes more strict than i) and i wanted to make dinners this week that were all vegan. i just made this 10 minutes ago! it tastes more like spaghetti but nonetheless it is so yummy! it goes really well with the zucchini noodles!
i added a couple of button mushrooms into the sauce since i had some lying around and added a little bit of water since i don't have a food processor (i'm using a magic bullet instead since i'm a raw newbie ;) ) but it was very delicious and best of all i feel guilt-free eating this! i'm definitely making it again since this is tasty AND healthy.
i really love how your recipes have minimal ingredients but doesn't sacrifice the taste.

I can't wait to try this recipe! Question: I notice you enjoy a lot of alfalfa sprouts. :) I would love to incorporate more of these in our diet. How do you best enjoy them? Do you add a dressing or something? Thanks!

You are right about my enjoying a lot of alfalfa sprouts! I don't tend to eat them on their own, but I love incorporating them into a salad or on top of raw crackers or as a garnish (for added flavor) on raw veggie burgers etc...

So yes, I usually use a dressing (whatever salad dressing I am already using), for example, a vinagrette dressing or a raw ranch.
