Ingredients
3 sweet potatoes (cut in cubes)
1½ cups sunflower seeds (soaked overnight, drained, rinsed)
2 tablespoons psyllium powder (as a thickener)
Olive oil (for consistency)
Agave nectar (to taste)

Kandace, what size sweet potatoes do you generally use for this recipe? Do you have an estimated weight? I'll probably just end up guesstimating based on the consistency, but I truly am excited to try this recipe.

This is basically a side dish for holidays. I bed it could be good as a pie filling too, though - maybe sweetened a bit?
