Serves 4-6 people
Ingredients
BASE OF ICE CREAM
1 cup cashews (soaked)
1 cup coconut (shredded)
1 avacado
½ cup water
2 tablespoons coconut oil
1 cup agave nectar or honey
Pinch of salt
3 tablespoons fresh mint
1 teaspoon mint oil (you can add more if you like a strong mint flavor)
CACAO SWIRLS
½ cup cacao powder
¾ cup agave nectar or honey
1 tablespoon coconut oil
Recipe Directions
BASE OF ICE CREAM
1. Add all ingredients into a food processor and blend till smooth and creamy
2. Put the mixture into a bowl. Set aside.
CACAO SWIRLS
3. Add all ingredients for cacao swirls into food processor and pulse till smooth.
4. Take a large container that can be put into the freezer and start alternating layers of base ice cream and cacao mix.
5. Put in freezer overnight.

So good!
You can just mix both ice cream and cacao mix together, but i like getting the swirl effect.

You know, if you add between a tsp and a tablespoon of spirulina to this recipe, it makes the whole thing GREEN, like the "original" mint chocolate chip! (Got that idea from David Wolfe and Shazzie's NAKED CHOCOLATE!)
