2 cups sunflower seeds (soaked 24 hours)
¼ cup flax seeds
¼ cup golden flax seeds
2 teaspoons salt
2 tablespoons olive oil
3 cups corn
2 teaspoons marjoram
2 tablespoons lemon Juice
1. Process 2 cups of the corn and 2 cups sunflower seeds until smooth and set aside.
2. Process the remaining 1 cup of corn until it’s chunky with bits and looks a bit like creamed corn. Add to the sunflower/corn mix.
3. Add the remaining ingredients (salt, lemon juice, olive oil, marjoram and flax seeds) to the sunflower/corn mix and stir together.
4. Add to Teflex lined trays and dehydrate at 115 degrees for 24 hours. Flip and score the crackers halfway through.
This makes 3 trays of thickish crackers for me. This might also be good broken up into tiny bits as “croutons” on a salad as well.
This is a savory variation on Mewmewmint’s awesome Sunflower Corn Crackers.
