2 ears of sweet corn (cut and scraped)
2 tablespoons coconut (shredded)
1 teaspoon lime juice
¼ teaspoon sea salt
Pinch of pepper
1. Combine in a bowl and serve.

A couple of days ago, I whipped this up as a snack and my whole family loved it, so here it is!
My mother came up with the name since the corn has a sweet flavor.
If you do not have fresh ears of corn, this recipe would probably take about 1 cup of cut corn. Just a guess though, so it would be smart to just go by taste.
