YieldServes 4 or enough for a cake
1 cup young Thai coconut meat
1 cup macadamia nuts (soaked)
1 cup water
1 teaspoon vanilla extract
1 vanilla bean (sliced)
1 dash of sea salt
3/4 cup raw agave or honey
1. Blend all the ingredients in a high–speed blender until smooth.
2. Place in a bowl and put the vanilla bean in the mixture.
3. Chill for two hours, or until you can’t stand it anymore.

Rich, creamy, and so much like vanilla pudding, you’ll be amazed. Totally cured my craving for it.
Take out the vanilla pods and put aside if you're going to make a new dessert right away using them. Otherwise, toss.
This can also can be made into variations like slightly thicker for vanilla icing. Just use less water.
