Ingredients
- 1 cup roughly chopped red bell peppers
- 1/3 cup cashews
- 1/3 cup water
- 1/2 teaspoon sea salt
- 1/2 cup more diced red bell pepper (reserve - do not blend)
Recipe Directions
- 1. Throw all ingredients (except last 1/2 cup of red peppers) in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let this raw red bell pepper soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw red bell pepper soup recipe.
- 2. Transfer raw red pepper soup to a bowl. Add the remaining 1/2 cup of diced red peppers and mix gently with a spoon.
- 3. Garnish with whatever you like! I simply sprinkled my soup with some dried basil. Eat immediately.

Big thanks to Julie K and her comment on my raw tomato soup recipe for inspiring me to modify one of my existing raw soup recipes to come up with this super creamy raw red bell pepper soup! This recipe is super simple and requires only a blender to make.
It's also very quick to pull together if you have two red peppers in the fridge, as well as some cashews in the cupboard.
By the way, red bell peppers are sweet. So do not use green bell peppers for this recipe since they aren't sweet enough!
This raw red pepper soup recipe makes a nice big bowl for one person. :)
It takes approx. 1 medium red bell pepper to make 1 cup roughly chopped red bell peppers.

Hi Adam, using roasted red pepper would no longer be raw, but if you are okay with that then I presume it would turn out okay. It is very flavorful on its own though, and in my opinion roasted is not necessary.

A great recipe! I tried this today, and loved it! I am incorporating more raw foods into my diet with the goal of eventually going totally raw. This was so yummy and nourishing. I can't wait to try more recipes.

Raw red pepper soup recipe
My girlfriend is a raw vegan. Love her a ton and I do want to be able to share my meals with her so this website has been a great help for me to relearn how to put something tasty on the table at the end of the day.
Made this recipe a few times now and we are both very fond of it!
With this particular recipe I can recommend Blending half a red chili pepper through for a little extra kick!
(we put a whole one in because I always prepare a double recipe*) and we only use a 1/4ts of salt.

Lovely soup! However, I added 3 sundried tomatoes, 1 fresh tomato, pinch of fresh parsley, and some spices to the mix and still thought it was missing something (maybe onion or garlic). I don’t think red peppers should stand alone in a soup when other veggies can enhance the peppers’ unique flavor...and vice versa, the red pepper works wonders in a raw tomato soup. Needless to say, “I licked the bowl 😋”

If you feel it is still missing something: Try adding half a red chili pepper. That really nailed this recipe for us! (but then I would leave out the Parsley). We also had a garlic attempt, but found this not really kicking it with the bell-pepper. Happy (not)Cooking ^^

Raw red pepper soup recipe
I'm brand new to eating raw (day 2 but really only day 1 since yesterday didn't turn out so well). This recipe was really easy and tasted amazing! Although, I have to admit trying out cold soup on an extra cold day with freezing rain outside wasn't the easiest task. So I cheated and nuked my soup for 15-30seconds. (Aparently my blender didn't do very much to warm it up by itself). I would absolutly love this soup in the summer or even in the warmer parts of spring and fall.

Glad your bf liked! I've been playing with adding coconut milk to some of my soups lately (instead of cashews) - that would probably work here too for a little twist!
If you haven't made many other raw soups yet, the tomato, celery and cream of mushroom soups are good too.

Another winner!! I loved this! I changed it up just a bit. I used almonds, as I didn't have cashews. I also added two garlic cloves, onion powder, cayenne, and a jalapeño. I too love my warm soups, so I used hot water as someone mentioned. Excellent!! Thank you!!!

Raw red pepper soup recipe
I tried this soup tonight and really enjoyed it! I only used 1/4 cup of water, but next time I'd use less, as I would have preferred the soup a bit thicker. I added tomato in addition to the bell pepper as mix ins, since I had one that needed to be used up and thought it went great with the pepper! I also added a pinch of basil, like I saw suggested in one of the comments and thought that added a good flavor. I'll definitely be making this one again! Although I do think I prefer the tomato soup recipe to this one (what can I say? I love tomatoes!).
