2 handfuls of spinach
1 teaspoon olive oil
2 teaspoons lemon juice
Half clove garlic (minced)
1/2 teaspoon oregano (minced)
1 teaspoon yacon syrup
Sea salt (to taste)
1 turnip root (peeled)
CHERRY TOMATO SALAD
1/2 pint cherry tomatoes
1 teaspoon lemon juice
1/2 teaspoon garlic (minced)
2 teaspoons olive oil
1/3 cup spinach (julienned)
Sea salt (to taste)
SLIDERS
1. Mix all ingredients (except the turnip) in a food processor until nice and creamy. Do not over mix.
2. Cut the turnip on a mandoline into thin round slices. You can also do this with a sharp knife.
CHERRY TOMATO SALAD
3. Mix all ingredients in a bowl.
4. Let marinate for 1 hour at room temperature.
5. Serve the sliders on a bed of of this salad. Yum!

This sounds so good! I think i'm going to use Parsnips instead of turnips... And, Agave instead of Yacon - i just don't have any Yacon... thanks for posting!

If the insides seem to squeeze out when eating, you could eat it without a turnip on top, just one on the bottom. :)

If the insides seem to squeeze out when eating, you could eat it without a turnip on top, just one on the bottom. :)

These sliders look so great, but are they difficult to eat? It would seem that the filling would squeeze out when you take a bite, or even if you did the knife and fork thing, it would squish out. Is it meant for finger food? I look forward to trying. Thank you.

Ha! I LOVE the use of the word 'sliders'. I had an actual slider once in my lilfe (I was 12)-- think greasy cardboard with ample gristle... never again!

You can prepare them ahead of time and assemble it together right before serving. Another thing you can do is dehydrate the turnip for 12 hrs to give it more of a crunch. :)

Looks beautiful! Did you put your turnip rounds together with the spinach avocado mixture ahead of time also, or do you have to make them and serve them immediately?
