Ingredients
3-4 carrots
1 beet
1/2 apple
1/3 cup soaked seseme seeds
1-2 cloves garlic
4 tbl olive oil
squeeze of lemon
squeeze of orange
1 tbl miso (optional)
Recipe Directions
Grate the carrots, beets, apple, add sesame seeds. In a separate glass crush the garlic and stir with miso, olive oil, lemon juice, orange juice—mix to taste. Stir in with the grated veggies.

beet carrot seseme salad
Just made this, eating it now. Mmmm. I added a bit of onion, and a head of baby bok choy to make a nice contrast to the red color. I'll surely make this again. I had my first raw beet this week so I'm trying to find lots of beet recipes. This one is simple and good.
