5 carrots, grated
1 orange, juiced
raisins, soaked in orange juice
1 cup mixed nuts, chopped
Juice an orange. Leave raisins in salad container to soak in the juice. Add grated carrots and nuts to the container. Toss. Refrigerate for at least 2 hours.
