2 large tomatoes (cut in nice big pieces)
1 mango (peeled, cut in pieces)
1 tablespoon lemon juice
2 tablespoons orange juice
1 tablespoon olive oil
¼ teaspoon curry powder
Pinch of salt (optional)
Freshly ground pepper (optional)
5 fresh basil leaves (chopped)
Calendula petals for garnish (optional)
1. Put the tomatoes and mango on a plate.
2. Mix the vinaigrette ingredients together (lemon and orange juice, olive oil, curry powder, salt, pepper, basil) and pour over the tomatoes and mango.
3. Garnish with more fresh basil and some calendula petals if you are lucky enough to have some.
Delicious, juicy, sweet, and lightly spicy.
I found the idea to sprinkle curry powder over tomato and mango on a French non-raw blog.
Then I invented this recipe around this idea, adding a vinaigrette and fresh basil.
