Ingredients
- 1 1/4 cups chopped fresh mushrooms
- 1/3 cup cashews
- 1/3 cup water
- 1/4 teaspoon sea salt
- 1/3 cup finely chopped fresh mushrooms (reserve - do not add to blender)
Recipe Directions
- 1. Wash and dry your mushrooms. Chop 'em up a bit.
- 2. Add all ingredients (except the second amount of reserved finely chopped mushrooms) into your high-speed blender. Blend on high until very smooth and well-blended. Blend for an abnormally long time because you want this raw cream of mushroom recipe to be slightly warm when coming out of the blender.
- 3. Pour liquidy mushroom soup mixture into a bowl(s). Add remaining mushrooms and stir with a spoon. See what we're doing here? We're making a liquidy mixture and then adding some chunks to it to give it some texture and variety. That's the trick to all my raw soups.
- 4. Eat this raw cream of mushroom soup recipe immediately, while still warm from the blender!

She is dying to making a batch of raw cream of mushroom soup so I wanted to post my simple mushroom soup recipe for her ASAP! I've actually been eating this for lunch all the time lately. As you can tell, I am on a raw vegan soup kick!
It's really quite freaky how much this tastes like Campbell's brand cream of mushroom soup. Also, you can vary the water content of this soup quite a bit to alter the result. I would start with 1/4 cup of water and slowly add a bit more water if necessary to (a) facilitate blending; and (2) to get the consistency that you like your soup.
Another note... Sometimes I like to make a very thick batch of this soup and use it like a mushroomy gravy, as well. Mmm!
In terms of portion sizes, this raw vegan mushroom soup recipe is perfect for one nice big bowl of soup for one person.

If I store the soup in the fridge how long is it good for? And is it a possibility to heat the soup on the stove just for added warmth. I love soups, but I like them only warm or hot.

Hi, Really delicious and so quick! I'm having it again today. Really getting into your recipes because they are so easy to prepare and delicious..thank you, you make raw food accessible and possible! (As someone else mentioned I soaked the 'topping' mushrooms in soy sauce and a little oil for half an hour or so.)

The "belle of the bowl" cream of mushroom soup and sweet corn... annnd 1/8 of cumin+curry powder, 1/2 avocado, 1 clove minced garlic... sorry, Laura-Jane, I couldn't resist to tweak a little ? (you know me). It was very creamy, smooth, and of course, delicious.

Wow! This is amazing! And so little ingredients and quick to make. I cannot wait for hubby to come home and I will make his some. He used to eat cold Campbells' Cream of Mushroom soup out of the can. I can also see no more wasted mushrooms in our home. The running joke is I always buy a ton of them at Costco and forget about them and die a slow death in the garage refrigerator.

He made a massive salad (I made your raw ranch dressing for it) and I tripled the mushroom soup recipe for supper last night and he loved it all. So far, day one of going raw was fantastic. I also made him your raw brownies and of course, put the raw icing on it. That made for a very happy man! (I will say about those raw brownies, they are so decadently rich that a small one inch square is more than enough for me)

I really liked this. I may cut out the nuts and use hemp next time. I am trying to lower my consumption of nuts. I added some celery, tsp. of olive oil, fresh cracked pepper...

I hadn't made this one in a while, but last week I needed something easy, so I chopped my mushrooms up and added a handful of parsley from my garden. The herbs were a great addition!

Raw cream of mushroom soup recipe
I am relatively new to raw and had a real hankering for mushroom soup. First of all, let me say, I am so thankful for this diet which does not deny us hardly anything whilst giving us countless benefits. Praise be. Back to the soup, I took this recipe but added some dried raw Porcini mushrooms, some walnuts and sprouted chick peas. It was NOT good and had to be poured away. I then made the original recipe Rawtarian Mushroom Soup. It hit the spot, perfectly. I truly satisfied my craving. Thank you, Rawtarian for sharing your gift.

I know this might seem strange tonask, but instead of water could one possibly use organic better than boullian broth ? Im just starting out and have not gone completely raw as of yet.
