Ingredients

1 Organic Cucumber
1-2 Tablespoons Mayonnaise
Sea Salt
Pepper

Recipe Directions

For the mayonnaise I used rawozzy’s recipe (from healthy diet.com) here on this site. (Note: I refrigerated my mayo for half an hour to make it more spreadable)

I used a 7 inch organic cucumber, but whatever works for you! Just cut your cucumber into slices and lay on a plate, spread the mayo over each one and sprinkle with salt and pepper. If you use this for entertaining guests, you may want to make a huge batch because they go pretty quick :) They are sooooo good! This recipe however will serve one or two people.

I am glad I am not the only one who does this! :) I thought I was weird at first. I slice up my cukes like this too and put whatever raw sauce or spread I have made on top with maybe some rawmesan or chopped veggies or other spices. Quickiest raw snack ever! I have been looking for a good raw mayo though - I haven't been happy with any of the ones I have tried so far - I haven't tried rawozzy's yet so that will be next on my list! Thanks!
