Ingredients
2 zucchinis (peeled)
1 tablespoon olive oil
1 teaspoon sea salt
5 basil leaves
1 large tomato
1 clove garlic
2 tablespoons sun dried tomato
1 teaspoon sea salt
Recipe Directions
1. Peel zucchini and set shavings aside. Cut zucchini length wise into thin spaghetti-like strips.
2. Add 1 tablespoon of olive oil and 1 teaspoon sea salt.
3. Place in bowl and put in dehydrator for 1 hour.
4. To make the sauce, in the food processor add basil leaves, large tomato, 1 teaspoon sea salt, 2 tablespoons sun dried tomatoes, garlic, and the zucchini shavings (meat). Blend until satisfied with consistency.
5. Place in dehydrator for 1 hour.
Rhaphiolepis's Thoughts

This was a quick and simple dinner that I whipped together with the remainder of what I had left from the farmer’s market (except the basil – it came from my patio garden).
I was so excited with the excellent flavor and texture.
I would recommend this dish to beginner raw foodies.
Serve to meat eaters. I did and mine loved it! He even wanted to name it hearty!

is it the core of the zucchini (seeds) that you end up putting in the food processor?

you should add the nut_free flag to it- its so great to see a meaty sauce without nuts. well done!

the core is what will make the pasta. the skin goes in the food processor.

Shucks, I just made dinner, it's yummy as all hell but your dinner looks so good! I love making raw zucchini pastas. You did a great job on the "meat sauce" I love this cute little pic above! Thank you for your kind offering!!!
