Yield60 medium-size balls
2 cups coconut oil
4 cups coconut (grated)
2 cups cashews (soaked overnight, drained)
2 cups dates (soaked, pitted)
1. In a food processor, chop the cashews into very small pieces and pour into a bowl.
2. Blend dates to a paste.
3. Mix date paste with the cashews, 2 cups of grated coconut, and coconut oil.
4. Place mixture in the refrigerator to harden a bit.
5. Form balls and roll on the rest of the coconut. Keep refrigerated.

These are so good!
It was my first raw dessert. I didn’t even know it was raw until afterwards.
In this pic, I didn’t roll mine in the coconut flakes. I just mixed everything together.
