Makes two servings
Ingredients
2 zuccinni (peeled, sliced in half)
2 tomatoes (sliced)
1 corn on the cob (cut)
1 tablespoon wild rice (soaked)
2 rosemary stems
1 tablespoon Italian seasoning
Recipe Directions
1. Slice the tomatoes, peel the zucchini and cut in half, then sprinkle them with Italian seasoning.
2. Place the tomatoes, zucchini, and rosemary stems on the dehydrator. Dehydrate for about four hours.
3. Also soak a bowl of wild rice (use leftovers for later).
4. To serve, lay out the tomatoes in a pile on a plate, then lay the zucchinis on top of them, stick the rosemary stems inside of the pile, then cut fresh corn off the cob and place it around the dish. Take a tablespoon of soaked wild rice and pour it in the middle of the dish and voila, you have a winner!!

I wanted something that looked like pasta, but I don’t really know what it came out to be, except delicious!!

Hi, it sounds great. Just wondering what kind/brand of dehydrater did you buy? I have never purchased one, looking to do so but want to see which brand(s) people seem to prefer. Thanks for any info.

Buy the best - Excalibur! www.fernsnutrition.com. I live practically next door, so it was easy for me to go pick one up, but they do have free shipping. Everyone recommended the 9-tray, so that's what I got. Good luck!

hmm that sounds so satisfying... especially the rosemary. bet it smelled nice.
