5 big flat crackers
Ingredients
3 cloves garlic
2 tablespoons flax seed meal (ground)
½ cup almonds
Salt
Pepper
5 small carrots
Recipe Directions
1. Ground almonds to make flour.
2. Put in food processor with carrots, garlic, flax seed meal, salt, and pepper to taste. Process to mix.
3. Make flat crackers and place on dehydrator sheets. Dehydrate at 105 Fahrenheit for 10-12 hours.
4. Flip the crackers after 6 hours and continue dehydrating.

I have been trying to recreate this carrot cracker recipe that I had a while back and I finally did it.
The crackers are really tasty.

Tell, me.....if I want to use carrot pulp instead of carrots in this recipe, how much would I use...such as 1 cup, 2 cups? or what would you recommend?

I am not a huge fan of the strong flavour of carrots, but the garlic in this recipe softens the strong carrot-y taste, and makes these crackers oh so delicous! Yum, I'm eating them right now with the Tommie's Cashew Cheese recipe from this website. I just added a little bit more water to the cheese to make a very sweet dip, which goes very nicely with the crackers. Ooh yes, love the garlicy taste! If you love garlic, add 3 BIG cloves, if you don't like it so much, add 3 small, that's my advice.

~thank you sounds nice and very simple. I might make it as a pâté; since i don’t have a dehydrator... i bet it would be good as well. what about oil?

I don't know what I did wrong but I had little success with this recipe. I had to add oil, otherwise the mix was impossible to spread. The recipe says it makes 5 big crackers - I barely got one dehydrator sheet covered. I made them too thin, so now I have a tasty carrot crumble to throw over a salad, I guess!

as a pate...delish! I am making mine right now in the dehydrator. I hope they turn out. Unfortunately, I didn't have any flax, so I substituted sesame seeds and added a little flax oil. I also substitued cashews for the almonds....I hope it works!!! :-D

MicheleSS you can put 1 cup almond flower. I do not like flax seeds much in these crackers so I do not put a lot, if you want you cab put more. these crackers are so good with the almond cheese I made and put the recipe on this site. I am making another batch of these crackers today after work. they are delicious.
jvetter I do not like zucchini crackers much, I made them a few times and I don't really car emuch for zucchini crackers. I find they don't have much taste.
rawmama, I guess you can try the crackers with the left over carrot pulp, however I am not sure if they will still have flavour, but you can always try. let us know if it comes out good with the carrot pulp.

I did this with zucchini also. You just have to salt the shredded zucchini and let it drain for a while because it will be too watery if you don't. But it was delicious also! Same recipe, just substitute zucchini for carrots.

I did not add oil, you can try it out and let us know if it comes out better with oil. It tastes ok as a pate, but let me tell you that as crackers they are delicious. I just had two of them with the almond cheese recipe I submitted on this site. I only have 3 left now and I 'll keep them for tomorrow, but I can't stop eating those crackers with the almond cheese I made. absolutely delicious!
