Recipe Directions

Peel and seed cucumber. Cut into 1/4 inch half moon slices.

Seed tomato and cut into 1/4 inch strips.

Very thinly slice red onion. Soak the red onion in cold water for between 5-10 minutes. This makes the red onion flavor a little bit milder.

Mix cucumber, tomato, red onion, juice of half a lemon and a dash of olive oil.

Plate and sprinkle with pine nuts and a few olives. Salt if desired.
