I just made this to use up some produce, and it was pretty darn good.

Ingredients
1 Avocado, cubed
½ Cucmber, peeled and chopped
1 Roma Tomato, chopped
1 tablespoon Olive Oil
1 sprinkle Vinegar
1 dash Basil
1 dash Pepper
Recipe Directions
Peel and chop one half cucumber
Score and cube one avocado
Chop one roma tomato
Place everything in bowl and add oil, vinegar, basil and pepper. Lightly toss. I used a balsamic vinegar, which tasted great, but made the avocado look a little unpleasant. You may want to use apple cider vinegar for visual appeal.

I make this ALL the time except I add onion aswell as red pepper and instead of vinegar/oil, I do a lemon, pepper, flax oil dressing! There are countless variations of this salad!!
