Recipe Directions

1. Cut up the broccoli, cauliflower, and mushrooms and place in a bowl.

2. Stir together the olive oil, garlic, red onion, lemon juice, and salt. This is your marinade for the vegetables.

3. Stir it into the veggies and let marinate in the fridge for a few hours, stirring occasionally.

4. An hour or so before eating, stir in the chopped almonds and the Rich Cheddar Sauce.

5. Warm in the dehydrator at 105 Fahrenheit for about an hour. You could skip the dehydrator part if you’d like. I haven’t tried it without warming it up, but I’m sure it would still be pretty tasty.

She asked if I could I make a raw version of the cooked broccoli cheese casserole we used to make?

It was very nice. My young (4 y.o.) daughter loved it, as did my mom. I'm not a big broccoli fan, but I love the concept and creativity that went in to this dish! Thanks!

Hmmm, mike4973, all the wild rice that I've been able to find has been roasted. Where do you get yours? I would really love to find a place that sells the raw stuff.

Yum, this was sooo good! I don't have a dehydrator yet so I set my oven on the lowest setting and opened up the door and put the casserole in for a few minutes. It was delicious! And the leftovers that I ate straight out of the fridge tasted just as good. Thanks for sharing!

Wild rice IS raw!

progressivechick, hope you like it. The original recipe also has rice in it. I was thinking that one could soak some wild rice and add that, except, unfortunately, I don't think wild rice is raw, at least I haven't found any, yet. I guess it could still be added if a person was okay with that. It could make a good transition food.
