Yield
1 quart or so, depending on how much water you add
Ingredients
1½ cups raw cashews
1 young coconut, water, and meat
½ teaspoon nutmeg
½ cup agave nectar
1 teaspoon vanilla extract
½ teaspoon turmeric (for color)
¼ teaspoon sea salt
Water (to thin to desired consistency)
Recipe Directions
1. Put all ingredients, except coconut, in the blender. Add just enough coconut water to cover cashews.
2. Start blending, adding coconut water a little at a time to keep it going.
3. When the cashews are well blended and creamy, add the coconut meat and blend well.
4. Add water to thin it to the consistency and flavor strength you like. Enjoy!

I would think you could put this in an ice cream maker and make cocnog ice cream out of it!!

This looks very yummy! I don't care if we're past the holiday season, I'm going to give this a try. I've been looking for a raw eggnog recipe using young coconut. Thanks!

Bkhand40 - Yes, it is great as an ice cream! When I make it into ice cream, I add more agave and leave out the water to make it thicker and creamier.
